Vegetables  – plants that, in whole or in part, constitute human food.

They can be eaten raw or after heat treatment. Usable parts of vegetable plants can be whole plants or only their leaves, fruits, inflorescences, tubers, stems and roots.
Vegetables also include edible mushrooms and flower buds of capers and olive fruit (except those for the production of oils).

At least 250 species of plants are recognized as vegetables in the world.
